Both flinty reduction and rose notes play on the nose. The palate comes in with concentration and a pithy, phenolic texture that lends structure and backbone to this rich, rounded, almost oily but dry wine. Pleasant citrus-pith bitterness sits well with the bold, warm but dry generosity. It’s best to let this come into its own. Drink 2025–2035.

Lemon gold with aromas of Fuji apple, clove, and vanilla, the palate is elegant and intense with citrus, sea spray, and finely balanced oak leading to a long, refined finish.
3-Course: Wagyu Beef stew over Polenta
served with Venge Vineyards 2023 Silencieux Cabernet Sauvignon Napa Valley California
Powerfully aromatic and expressive, this wine opens with scents of concentrated, sweet cassis, anise, blackberries, roasted coffee, blue herbs and barrel vanillin. On the palate, we find firm tannins that deliver grip and peak curiosity, with all pockets of the mouth left yearning for another sip. Full-bodied and extracted with ripe black fruit, blueberries, caramel and a delightful hint of fresh, blue herbs that concentrate into a substantial finish. This wine is approachable upon release and cellar worthy in proper aging conditions. Simply put, Venge’s finest Silencieux to date.
4-Course: Iberico Pork Tenderloin with lemon, capers & pan sauce

The 2021 Rocks & Flowers wafts up with a Grenache-driven bouquet with wild strawberries, sweet florals and spice. Round and juicy in character, this impresses with a reverberation of zesty acidity that adds wild energy as ripe raspberry fruits cascade throughout. It finishes crisp and fresh, only gently tannic, while calling the taster back to the glass. 61% Grenache, 25% Syrah, 10% Carnigan, 10% Mourvèdre & 2% Petit Sirah.
5-Course: Cinnamon Brioche Custard with Ice wine whipped cream
served with Domaine de Durban 2023 Muscat de Beaumes de Venise Southern Rhone Valley France
With a heady bouquet of orange blossom and apricots and a wonderfully honeyed palate of ripe peaches and yellow plums this hedonistic sweet, golden Muscat wine is delicious with all manner of fruit-based desserts and makes for a superb 'bonne bouche' at the end of a meal.
