If sunshine could be bottled it would be this. Aromas of fresh succulent stone fruit, a hint of yeast, citrus blossoms and notes of quince on the nose. The mousse is creamy and light with baked red apples, blood orange zest, white grapefruit, sticky caramel and layered salinity with a mouthwatering finish. It will bring a smile to your lips.
2-Course: Gougeres stuffed with Salmon Mousse with Dill and Fried Caper

As with all the Pinot Noirs from this talented winemaker, the 2023 Pinot Noir Sta. Rita Hills was not destemmed and was aged all in 100% neutral oak barrels. Medium ruby-hued, darker berries and redcurrants intermixed with rose, damp forest floor, and subtle spicy, meaty nuances all emerge from the glass. It’s remarkably pure and medium-bodied, with a pure, seamless, layered mouthfeel and ultra-fine tannins. This is classic Greg Brewer brilliance with Pinot Noir. Drink bottles any time over the coming decade. Drink 2025-2035.
3-Course: Sous Vide Duck Breast with Cherry and Brandy Sauce over Purple Sweet Potato Puree

Pouring a dark magenta/purple color, the 2023 Zinfandel Russian River Valley is deeper, offering notes of black cherry cordial, dark chocolate, lavender oils, wet stones, and dark sappy earth. The palate is full-bodied, with a broad-shouldered tannic structure that has an even feel, while refreshing acidity holds this wine together. It’s well-structured and has the ability to age over the coming 10 years.
4-Course: Braised Beef Short Rib over Ricotta Polenta with Glazed Carrots and Pearl Onions

The 2022 Cabernet Sauvignon Alexander Valley comes from one of the coldest sites from which they farm Cabernet Sauvignon. A dark red color, the wine is forward with blue-fruited highlights and shining with notes of juniper, pine, violets, forest floor, and fresh herbs. It’s long, elegant, and focused on the palate, with a more linear feel, an even plushness of tannins, and redcurrants, cassis, and vanilla shining through to the long finish. Drink 2025-2050.

Winemaker Andy Erickson. In a new beginning for Favia, an equal blend of Coombsville and Oakville represents the best of both appellations; the fresh, savory, mineral edge of the former intertwining with the deep flavor and floral lift. A complete, balanced expression of Napa. Excellent.
