Distinctly savory, the NV Brut Trento doc opens with a blend of dusty dried flowers, cardamom and freshly sliced pears. It fills the palate with a silken bead of fine bubbles, taking on a salty-to-sweet sensation as tactile mineral tones mix with ripe orchard fruits. This finishes with admirable length and candied citrus twang, tapering off remarkably fresh. I love the balance and complexity here, especially for a Non-vintage Brut. Disgorged: 2023.

Perfumed, focused and loaded with energy, this radiant red boasts enticing scents of iris, rose, crushed mint and wild berry. Boasting ethereal elegance as well as intensity and flavor, the chiseled palate has great fruit purity, delivering juicy red cherry, spiced cranberry, star anise and white pepper. Noble tannins and bright acidity provide balance and an ageworthy framework. Drink 2024– 2046. Cellar Selection.

This cuts more of a broad swath than its peers, yet remains graceful, evoking strawberry, cherry, tobacco and stony mineral flavors. Long and dense in structure, with a tobacco- and underbrush-tinged finish. Best from 2021 through 2033.

The 2016 Brunello di Montalcino has compelling aromatics of cherry liqueur, sweet licorice, cedar, and forested earth. The palate is crystalline and full-bodied, with red plum skin and warming spice. There is a lot to love here, as this wine casts a large net for its versatility. Enjoy some now and lay some down, this is a great value. Drink 2021-2026.

 

4-Course: Pappardelle alla Ragu with Pork, Veal and Beef

Super classic Brunello from a classic vintage, being released now. The perfume to this is really something, with cherries, flowers, lead pencil and light hints of graphite. Then it moves to raspberries and black cherries with some sandalwood shavings. You just want to smell it. Clear and transparent. Full-bodied with very fine and succinct tannins that fill the mouth and show super tension and form. Extremely long and structured. Beautiful now, but this will age for decades ahead. Drink or hold.

Laced with ripe cherry, strawberry, floral, spice, iron and leather flavors, this red is complex and charming, yet with serious tannins that ply the structure and lift the long finish. The fine balance should facilitate longevity.
