We'll start off with Shrimp Cocktail and Sparkling Wine then segway into an 8oz. Broadleaf Australian Wagyu Tenderloin Steak served with roasted veggies.

 

1-B. Wise Trios 2023 Cabernet Sauvignon
Moon Mountain District Sonoma County California

Enjoyabilityfactor 93 Rating
2023 was nearly a perfect growing season resulting in wines of incredible balance. Pure red and black fruits intertwined with mineral, garrigue, and spice notes. Fresh acidity gives the wine extra tension. Seamless French oak integration delivers lively texture with lengthy finish.  Only 24 barrels produced.

 

2-Justin Vineyards 2022 Reserve Cabernet Sauvignon
Paso Robles California

The 2022 Reserve Cabernet Sauvignon is one of the best Paso Robles Cabernets available. Crafted from the same quality fruit as our flagship ISOSCELES blend, and made of 100% cabernet sauvignon grapes, this wine is a Cabernet lover’s dream. This wine is bold and complex with ripe black fruit, sweet spice, and that classic Cabernet mix of savory and herbal characteristics. Its structural texture keeps this wine balanced and fresh from its beginning through its very long, complex finish. It’s delicious on release, but don’t hesitate to let it age for a few years — or even a decade — to see how it evolves. That is, if you can wait.

 

3-Caterwaul 2023 Cabernet Sauvignon
Sonoma Valley California

Wine Spectator 91 Rating
Fresh and pure, with a pretty gilding of violet and iris notes draped over a solid core of cassis and cherry puree. Shows a graphite underpinning on the finish. Drink now through 2030.

 

4-Amulet 2021 AE Cabernet Sauvignon
Napa Valley California

Jeb Dunnuck 95 Rating
Despite the name, the 2021 AE Red Wine is 100% Cabernet Sauvignon, but I suspect this will move toward a red blend in the near future. The 2021 is terrific, with lots of attractive red and black fruits that turn more mineral-laced with time in the glass. Medium to full-bodied and concentrated, with building tannins, it’s another beautiful wine from this team where the cellar will be your friend. Hide bottles for 4-5 years, and I’d be shocked if it didn’t evolve gracefully over the following two decades or more. Drink: 2028-2048.

 

5-Barnett Vineyards 2023 Cabernet Sauvignon
Spring Mountain District Napa Valley California

Jeb Dunnuck 91 Rating
Aged 22 months in 80% new French oak, the 2023 Cabernet Sauvignon shows a dense purple hue with a Bordeaux-like character in its black and blue fruits, sappy herbs, leather, and graphite. It’s medium to full-bodied, nicely concentrated, has ripe, nicely integrated tannins, and outstanding length. Drink this complex, nuanced, supple, satisfying Spring Mountain Cabernet over the coming 10-12 years. Drink 2025-2037.
