Starter: Spicy Tuna Tartare Tostada on a Crispy Wonton wrapper
Louis Roederer Collection 246 Brut Champagne France
Wine Spectator 93 Rating
$49.99 bottle
A harmonious Champagne that shows impeccable balance, with depth and focus to its flavors of white cherry, Honeycrisp apple, tangerine peel and biscuit, while retaining vibrancy and grace. A chalky underpinning comes to the fore on the creamy finish, joining delicate spice and floral accents. Chardonnay, Pinot Noir and Meunier.
1-course: Kiwi Scallop Sashimi with Yuzu Vinaigrette and Yuzu Kosho
A-served with: Illumination 2024 Sauvignon Blanc Napa & Sonoma Counties California
Jeb Dunnuck 95 Rating
$34.99 bottle by the six pack $39.00 bottle
Coming from a mix of Sonoma and Napa fruit, the 2024 Illumination has a Bordeaux Blanc-like vibe in its ripe lime, orange blossom, mint, and spicy wood nuances. It brings plenty of sweet California fruit and is medium to full-bodied and concentrated, with bright acidity and a great finish. It’s beautifully done and just an impeccable 100% Sauvignon Blanc from California.
2-Course: Gougeres stuffed with Salmon Mousse with Dill and Fried Caper
B-served with: Shafer Vineyards 2024 Red Shoulder Ranch Chardonnay Carneros District Napa Valley California
Vinous 94 Rating
$79.99 bottle by the six pack $67.00 bottle
The 2024 Chardonnay Red Shoulder Ranch is a very pretty, elegant wine. Lemon confit, white flowers, mint and light tropical inflections are some of the many notes that grace this weightless, super refined Chardonnay. All the elements are so well balanced. There is a feeling of understated lightness here that is so appealing.
C-served with: Hudson 2022 Seashell Chardonnay Carneros Napa Valley California
Lisa Perrotti-Brown MW 100 Rating
$129.99 bottle (10 bottles in stock)
Soars from the glass with intense notes of honey-drizzled pears, apricots, and honeydew melon, plus nuances of orange blossoms and allspice. The full-bodied palate is super-intense with a creamy texture and jaw-dropping tension, finishing with epic length and complexity. Superb
3-Course: Sous Vide Duck Breast with Cherry and Brandy Sauce over Purple Sweet Potato Puree
D-served with: Hartford Family Winery 2023 Old Vines Zinfandel Russian River Valley California
Jeb Dunnuck 95 Rating
$39.99 bottle by the six pack $36.00 bottle
Pouring a dark magenta/purple color, the 2023 Zinfandel Russian River Valley is deeper, offering notes of black cherry cordial, dark chocolate, lavender oils, wet stones, and dark sappy earth. The palate is full-bodied, with a broad-shouldered tannic structure that has an even feel, while refreshing acidity holds this wine together. It’s well-structured and has the ability to age over the coming 10 years.
4-Course: Braised Beef Short Rib over Ricotta Polenta with Glazed Carrots and Pearl Onions
E-served with: Double Diamond by Schrader 2022 Oakville Cabernet Sauvignon Napa Valley California
Decanter Magazine 94 Rating
$89.99 bottle by the six pack $73.00 bottle (2023 vintage due in end of March)
The 2022 Double Diamond Oakville Cabernet Sauvignon is crafted from the younger vines of the To Kalon vineyard, aged in 50% new oak and once-used Schrader barrels. This label focuses on blocks in the Mondavi To Kalon portion that don’t make the cut for the primary Schrader wines. Vineyard manager Blake Wood emphasizes identifying blocks within areas like the ‘P Neighborhood’ of the To Kalon site, divided into distinct parcels. The wine exhibits a bright and vibrant profile, leaning toward red-fruited characteristics with crunchy black cherry and ripe plum notes. Rich toffee and caramel spices add complexity, while firm, structured tannins support the full-bodied richness. It is a compelling and layered expression of Oakville.
5-Course: Grilled Ribeye topped with Peppercorn Sauce served with Potatoes au Gratin and Asparagus
F-served with: Hundred Acre Fortunate Son 2022 Cabernet Sauvignon The Dreamer Napa Valley California
Decanter Magazine 97 Rating
$159.99 bottle by the six pack $150.00 bottle
The Dreamer 2022 fills the mouth with dark cherry and raspberry fruit, layered with leather, tobacco, and crushed cocoa nibs. Lush cherry compote and fine cedarwood spice add depth and warmth, leading to a full-bodied richness that feels both powerful and ephemeral. Crafted from 100% Cabernet Sauvignon, it was aged 30–32 months in ultra–tight-grained French oak barriques, lending polish and subtle structure to this deeply expressive wine.
G-served with: Favia 2023 Cabernet Sauvignon Oakville Napa Valley
James Suckling 98 Rating
$149.99 bottle by the six pack $100.00
Winemaker Andy Erickson. In a new beginning for Favia, an equal blend of Coombsville and Oakville represents the best of both appellations; the fresh, savory, mineral edge of the former intertwining with the deep flavor and floral lift. A complete, balanced expression of Napa. Excellent.
