Starting with a Champagne Toast
First Course: Lump Crab, Avocado & Fennel Salad Spread on Crostini.
Fresh lump crab layered with ripe avocado, shaved fennel, and citrus segments. Dressed with lemon-olive oil vinaigrette and topped with micro herbs and chili threads.

The 2024 Torrontés Estate was crafted from grapes sourced across the Calchaquí Valley. Yellow in hue, it reveals enticing aromas of lime and jasmine, complemented by subtle tropical and herbal notes. Dry, taut and refreshing, the wine flows with a pristine fruit core. This beautifully crafted Torrontés showcases a vibrant and youthful high-altitude style.
Second Course: Fresh Trofie Pasta with Wild Mushroom & Tomato Ragù
Handmade trofie pasta tossed in a tomato-based ragù of sautéed wild mushrooms, rosemary, and garlic. Finished with crispy lemon-herb pangrattato and shaved pecorino.

Violet and wild herb aromas give way to flavors of black cherry, blackberry and black currant in this tense, saturated red. Just beginning to relax and open up now, six years after the harvest. Shows terrific balance, with a long, black pepper–infused aftertaste. Sangiovese and Merlot. Drink now through 2045. 5,000 cases made, 2,500 cases imported.
Third course: Filet of Beef Tenderloin with Burnt Onion Purée & Charred Carrots
5 oz center-cut beef tenderloin, pan-seared and sliced medium-rare. Served with burnt onion purée, charred heirloom carrots, and a red wine demi-glace.

Aromas of wild blackberry, huckleberry and baking spices are followed by hints of vanilla bean, cigar box and rose petal. The tart berry, cocoa, coffee and leather characteristics on the palate lead into black tea and toasted oak notes. This is a medium bodied wine with fine tannins and balancing acid, the finish is long lasting with flavors of blackberry and spice.
Dessert: Angelica Ricotta Affogato al Vin Santo
House-made ricotta gelato drowned in Vin Santo and finished with crushed almond cantucci.

The color is a lively amber yellow with mahogany shade. The aromas on the nose are intense and fruity (date, dried fig, beeswax, honey). On the palate, moderately sweet. Long persistence and rich structure. A blend of Trebbiano, Malvasia, and San Colombano.
